Healthy Lasagna

My Mom made this about 3 weeks ago and it was really, really, really good! The recipe is courtesy of Ellie Krieger from Foodnetwork. My mom and I put our own spin on it!

You Will Need:

  • 12 ounces whole-wheat lasagna noodles (15 noodles)
  • 8 ounces ground turkey
  • 2 teaspoons olive oil
  • 8 ounces portobello mushrooms, diced (about 3 large mushroom caps)
  • 4 cups good quality store-bought marinara sauce
  • 1 (15 ounce) container part-skim ricotta cheese
  • 1 (10 ounce) package frozen chopped spinach, thawed and well drained
  • 1 egg, lightly beaten
  • 1/2 teaspoon sea  salt
  • 1/2 teaspoon freshly ground black pepper
  • 1/4 cup grated Parmesan
  • 3 ounces grated part-skim mozzarella cheese (about 2/3 cup)
  • 2 cloves of garlic, minced
  • Directions:

     1. Preheat the oven to 375 degrees F.

     2. Cook the noodles al dente according to the directions on the package.  Try cooking adding salt or olive oil into the boiling water. Drain them well then lay out on waxed paper to prevent them from sticking to each other.

    3. Heat a large nonstick skillet over a medium-high heat. Add the turkey and cook until no longer pink, breaking it up into small pieces as it cooks, about 3 minutes. Transfer the meat to a plate, discarding any fat remaining in the pan.

    4. Add the oil to the same pan and heat over a medium-high heat. Add the mushrooms and cook, stirring occasionally until all the liquid has evaporated and they begin to brown, about 5 minutes. Return the meat to the pan. Stir in 2 cups of the tomato sauce and simmer for 2 minutes.

    5. In a medium bowl combine the ricotta cheese, spinach, egg, the salt, and pepper.

    6. Spread 1 cup of tomato sauce on the bottom of a 9 by 13 inch baking dish. Place a layer of lasagna noodles on top, touching but not overlapping. Spread half of the ricotta mixture on top of the noodles. Add another layer of noodles. Top with half the turkey-mushroom mixture. Repeat with another layer of noodles, then remaining cheese mixture, more noodles, then remaining beef mixture and finally 1 more layer of noodles. Top the final layer of noodles with the remaining sauce, then sprinkle with the grated cheeses. Cover loosely with foil and bake for 45 minutes. Uncover and bake for 15 minutes more.


    Excellent Well-Dressed Salmon Dressing Recipe

I won’t give you the actual salmon recipe, because everyone has their own way of making it. But this dressing is phenomenal. And again, this is not my recipe.     Well-Dressed Salmon Dressing Recipe

    You Will Need:

    • 1/2 seedless cucumber
    • 2 small plum tomatoes
    • 1 shallot or 1/4 red onion, finely chopped, divided
    • 2 tablespoons Dijon mustard
    • 2 tablespoons sugar
    • 1/4 cup white wine vinegar
    • 1/2 cup extra-virgin olive oil, plus a drizzle
    • 1/4 cup finely chopped fresh dill
    • Salt and freshly ground black pepper


    On a cutting board, dice cucumber into 1/4-inch pieces – to peel or not to peel is up to you. Seed and dice the tomatoes into 1/4-inch pieces. Combine the cucumber, tomatoes and half of the shallots or red onion in bowl and reserve.

    In a small bowl, whisk together mustard, sugar, and white wine vinegar and remaining half of the shallots. Stream in extra-virgin olive oil while continuing to whisk. Stir in dill and season dressing with salt and pepper, to taste.

    I’m Back with Pasta Salad!

    I know, I have been gone for a long time!! I miss this site, I just haven’t add any recipes to add! Tonight, I made this amazing pasta salad! It’s so good! The only thing is, I will tell you the ingredients but it’s really your call to decide how much you use. There is no exact measurement! And this pasta salad is just as good hot as it is cold!

    You Will Need:

    – butter

    – olive oil

    – chicken breasts

    – parmesan cheese (grated)

    – capers

    – red bell pepper

    – scallion (or onion is fine, the scallion just gives the pasta a milder taste)

    – frozen (or cooked is fine as well) peas

    – balsamic vinegar

    – store brought Italian dressing- garlic

    – cherry tomatoes

    – rotoni pasta (or any thick pasta) wheat pasta has more fiber!

    – garlic


    1. Start off by boiling your water for your pasta so the pasta will be ready by the time your ready to start cooking.

    2. Marinade  your chicken with all of your favorite seasonings. I like to add  a little bit of cayenne pepper for a spicy feel, and a little bit of  soy sauce for a salty feel. Then throw your chicken in the fridge to marinade.

    3. Chop up everything.

    4. In a large saucepan add olive oil, butter, garlic, scallions, and chicken. COOKING ON LOW HEAT!

    5. Add in your tomatoes and red bell peppers, stirring occasionally.

    6. On even lower heat, add in your pasta.

    7. Add in parmesan cheese.

    8. Now add in olive oil, balsamic vinegar, and italian dressing!

    9. Enjoy!


    Random: Chocolate Covered Strawberries!

    Hey guys, I have a random chocolate covered strawberries! I creaed this recipe after I was looking online and could not find a simple recipe! Chocolate strawberries are a marvelous low fat (I think!) dessert to have! This recipe is just really simple. No hard techniques like trying to master how to melt chocolate over a stove! Well, I am changing things around here! For this recipe all you need is strawberries and chocolate chips. In a bowl pour about 1 cup of chocolate chips and put in the micorwave for about 30 or 20 seconds. Warning, the chocolate chips will not appear fully melted, you just have to take a spoon and stir it a little. Take out a plate and dip the strawberries into the bowl. Get a paper plate and put the strawberries in the micorwave for about 1 minute, to harden the chocolate! Enjoy!


    Mouth Watering Turkey Burkers

    I love to bake these burgers! Baking them instead of pan frying or grilling gives it a distinctive taste! Try this amazing recipe!

    You Will Need:

    -Turkey Meat (You can also use ground beef or chuck)

    -1 egg

    -1 packet of Lipton Onion Soup Mix

    -A dash of soy sauce

    -A dash of Worchestershire sauce

    – Black Pepper

    -A little bit of season all salt

    -Finely chopped onions and green peppers


    Preheat oven to 450 degrees

    In a medium bowl mix together all of the ingredients

    Put the bowl in the fridge for about 10 minutes to let the turkey stiffen up

    Put your turkey burgers in the oven for about 20 minutes

    Dress up your turkey burger with as many toppings as you want!
